Oleum Laguna is based in Villaconejos, in the southeast of the Community of Madrid, an area historically linked to olive growing and now recognized under the D.O.P. Aceites de Madrid.
The project is rooted in ecological agriculture and local production, with a clear focus on quality over volume. From the outset, Oleum Laguna was conceived as a modern almazara built around early harvest, freshness, and respect for the raw material rather than industrial scale.
Origins & Continuity

Oleum Laguna is a founder-led, family-run project. Pedro Laguna established the almazara with the aim of producing organic extra virgin olive oils that reflect Madrid’s landscape and varieties with honesty and precision.
The project remains closely managed, with direct involvement in grove management, harvest decisions, and oil production. Continuity here is expressed through control: from tree to bottle, decisions are taken with long-term quality and land stewardship in mind.

Production Philosophy



Production at Oleum Laguna is defined by early harvest and first cold extraction at very low temperatures. The objective is to protect the olive’s natural expression - green fruit, herbaceous notes, bitterness and pungency in balance - without masking or manipulation.
Technology is used as a tool for precision and hygiene, never as a stylistic shortcut. Each oil is designed to be expressive, clean, and food-driven.
