Aceites Pósito is the production arm of the Cooperativa del Campo Aceitera in Villarejo de Salvanés (Madrid), a community with centuries of olive tradition. The cooperative dates back to over 90 years of continuous activity, with its almazara (olive mill) recognized as one of the oldest and most modern in the Madrid region, combining historic architecture and skilled milling techniques.

This dual identity - rooted in tradition yet geared toward contemporary quality standards - is a defining feature of Aceites Pósito’s oils.

Madrid’s Oldest Olive Mill

Unlike single-proprietor producers, Aceites Pósito is a multi-member agricultural cooperative. Its membership spans approximately 300–334 farmer members from Villarejo de Salvanés and nearby municipalities, who contribute olives and share in governance and production.

The cooperative is governed by a council with a President, Vice President, Secretary, Treasurer, and multiple vocales (board members), representing the democratic structure customary to Spanish agricultural cooperatives.

Production Philosophy

Aceites Pósito combines artisan care and modern continuous milling systems to produce extra virgin olive oils that are fresh, expressive, and balanced. Olives are typically milled within 24 hours of harvest to preserve freshness, and oils are stored in stainless steel to prevent degradation before bottling.

This approach respects traditional extraction principles while adhering to D.O.P. quality rules and modern hygienic standards.
